Avial

A well balanced vegetarian dish with full of positive values. Batonnetts of various tropical vegetables and tubers  cooked to perfection (i.e.. just little more than half done) with fresh green masala, turmeric and roughly ground coconuts.

Ingredients    

1.  Potatoes                             

2.  Brinjal                                 

3.  French beans                      

4.  Drumsticks                                

5.  Banana (raw)                      

6.  Coconut (grated)                 

7.  Sour curd                            

8.  Coconut oil                         

9.  Cumin                                 

10.Turmeric                             

11.Curry leaves                        

12.Salt

 Method

1.    Wash and clean the vegetables and cut up into long pieces.

 

2.    Cook in a pan with just sufficient water .Add turmeric and curry leaves.

 

3.    Grind coconut coarsely with green chillies and cumin. Mix well with curd.

 

4.    When vegetables are cooked add the salt, coconut and curd mixture.

 

5.    Bring to boil on a slow fire and stop the fire.

 

6.   Add fresh coconut oil and stir well and remove from fire.
